~Sweet Potato Pie~
1 (40-ounce) can sweet potatoes, drained
1 teaspoon ground cinnamon
dash ground nutmeg
1 cup of sugar
2 tablespoons milk-free, soy free margarine,
1/2 teaspoon of salt
1 cup of apple juice
2 packets unflavored gelatin
4 tablespoons warm water
1 wheat-free pie crust, unbaked
Preheat the oven to 350 degrees. In a large bowl, mash the sweet potatoes. Then, add the cinnamon, nutmeg, and sugar. Mix it
In a small bowl, start combining the gelatin and warm water, stirring it until the gelatin dissolves. Add the sweet potato of mixture. Mix it well. Pour it into the pie crust. Bake it for 1 hour. Allow pie to set over night before serving.
*Tips Recipe was tested using a glass pie dish. Increase the oven temperature by 25 degrees more if you are using an aluminum pie pan.
